Origin: Akita pref.
Noodle type: Inaniwa udon
Boiling time: 3–4 min.
Description:
Gobun’s handmade Inaniwa udon is crafted using clear spring water from the Inaniwa region and high-quality wheat. For over 300 years, the traditional methods have been preserved, and every step—kneading, hand-twisting, drying, and ageing—is done entirely by skilled artisans.
Each strand is carefully made by hand, giving the noodles their signature smooth texture and refined, delicate flavour. Unlike some hand-stretched noodles, no cottonseed oil is used, resulting in a clean and light taste that highlights the character of the wheat.
Cooking tip:
Bring plenty of water to a boil (5–6L per 400g of noodles). Add the noodles and cook for 3–4 minutes. Drain and rinse well in cold water.
Enjoy either hot in broth or chilled with dipping sauce.
