USUYA Hand-Made Udon - Nanban Duck is a frozen Sanuki-style hand-made udon product produced by "Usuya" (うす家), a long-established udon manufacturer located on Shodoshima Island, Kagawa Prefecture, Japan. The official name of this product is "讃岐小豆島鴨南蛮手延うどん" (Sanuki Shodoshima Kamo Nanban Hand-Stretched Udon).

  • "Tebari" (Hand-Stretched) Method: These noodles are made using a traditional hand-stretching technique that has been passed down on Shodoshima Island for about 400 years since the Keicho era (Edo period). The dough is aged for approximately two days and repeatedly stretched, giving the noodles a firm, chewy texture and a uniquely smooth mouthfeel.

  • Carefully Brewed Soup Stock: The soup base uses soy sauce brewed locally on Shodoshima Island, blended with a rich dashi (stock) made from various ingredients such as bonito flakes, dried sardines, and kombu (kelp), resulting in a deep, mellow flavor.
