This freeze-dried grated yam is made from freshly grated Japanese nagaimo, preserving its natural flavour and characteristic texture. Simply add water to restore its smooth, slightly sticky consistency. Seasoned with bonito and kombu dashi and a touch of Okinawan salt, it pairs well with rice, soba, or udon.
