DASSAI Blue Essential Trio Tasting Set is a sake tasting set produced by the American "Dassai" brewery (Dassai Blue). It consists of three 375ml bottles of Junmai Daiginjo, designed to allow drinkers to compare and experience the flavour differences resulting from different rice polishing ratios (Seimaibuai) from the same brewery.

The core concept of this set is to present the three core products brewed by the Dassai brand in the United States.

Each of the three sakes has its own distinct flavour profile:

• Type 23: Complex aromas of anise, pear, and cotton candy. On the palate, flavours of lemon chiffon cake, honeysuckle, and stone fruits with a mineral touch. The finish is long and clean.

• Type 35: Aromas are dominated by the sweet fruitiness of white peach and ripe papaya. The palate is characterised by gentle sweetness and refreshing acidity. The finish is medium in length.

• Type 50: Aromas of licorice and cantaloupe. The palate presents flavours of pineapple candy, lemon curd, and vanilla, finishing with a hint of savoury saltiness and a crisp finish.

• Historic breakthrough: This marks the first time the legendary sake brand "Dassai" has brewed sake outside of Japan. Their American brewery is located in the Hudson Valley in Hyde Park, New York.

• Core comparative experience: The set allows you to simultaneously compare and taste three different rice polishing ratios – 23%, 35%, and 50% – and clearly understand their significant impact on sake flavour and texture.
