Origin: Akita pref.
Noodle type: Inaniwa udon
Boiling time: 3–4 min.
Description:
Gobun’s handmade Inaniwa udon is crafted using clear spring water from the Inaniwa region and high-quality wheat. For over 300 years, the traditional methods have been preserved, and every process—kneading, hand-twisting, drying, and ageing—is carried out entirely by skilled artisans.
Each strand is carefully made by hand, giving the noodles their signature smooth texture and clean, delicate flavour. No cottonseed oil is used, resulting in a light taste that highlights the natural character of the wheat.
Cooking tip:
Bring plenty of water to a boil (5–6L per 400g of noodles). Add the noodles and cook for 3–4 minutes. Drain, rinse thoroughly in cold water, and serve hot or chilled.
Store in cool dry place
