Origin: Yamagata pref.
Noodle type: Udon
Boiling time: About 10 min.
Description:
Made at the foothills of Mount Zao, this udon uses premium wheat flour ideal for noodle making and the pure water of Yamagata. Following traditional production methods, the dough is kneaded with plenty of water and slowly matured to develop depth of flavour.
Although the noodles are thin, they offer a texture and taste reminiscent of hand-made udon, making them suitable for many styles of preparation.
Cooking tip:
Bring about 2L of water to a full boil. Add the noodles gradually, loosening them as they go in. Boil for around 10 minutes, then let them steam for another 2–3 minutes. Drain quickly, rinse well under cold water, and serve.
Store in cool dry place
