A mix for making soft and chewy crepes using a frying pan. Enjoy them with sweet fillings such as fruit and cream, or prepare them as a light meal with savoury ingredients.

Instructions

Makes about 13 crepes (24 cm frying pan)
Preparation time: about 50 minutes (excluding resting time)

Ingredients
Mix 250g
Whole eggs 100g (about 2 medium eggs)
Vegetable oil 2 tbsp
Milk or water 500mL

Tools
Mixing bowl, whisk, frying pan, ladle, chopsticks

Instructions

1. Place the eggs and oil in a bowl and whisk until well combined.
2. Add the mix and gradually pour in the milk while whisking to prevent lumps, forming a smooth batter. Let the batter rest in the refrigerator for about 30 minutes.
3. Heat a frying pan over medium heat, lightly grease it with oil (not included in ingredients), pour in the batter and spread thinly across the pan. Cook until the surface is dry.
4. Use chopsticks or a spatula to flip the crepe and cook the other side briefly. Remove from the pan.
5. Add your preferred fillings or toppings and serve.

As a guide, the pan is ready when a small drop of batter sizzles gently.
If the centre becomes too thick, spread the batter with a ladle to even it out.

Store in cool dry place
