A pound cake mix made with wheat flour from Hokkaido. It bakes into a soft and moist cake with a light, fluffy texture. You can customise it by adding dried berries, chocolate, nuts, or mixing in ingredients such as banana or lemon peel.

Makes 1 pound cake (20 cm loaf tin)
Preparation time: about 40 minutes
Ingredients
Mix 200g
Unsalted butter 80g
Whole eggs 100g (about 2 medium eggs)
Milk 20mL
Tools
Mixing bowl, whisk, spatula, paper loaf tin, oven, skewer
Preparation
Melt the butter in advance and bring the eggs to room temperature.
1. Place all ingredients in a bowl and whisk until smooth with no lumps.
(If adding dried fruits or other ingredients, add them at the end.)
2. Pour the batter into the loaf tin and level the surface with a spatula.
Fill the tin to about 60% full.
3. Bake in a 180°C preheated oven for 30–35 minutes.
When the surface is lightly browned and a skewer inserted comes out clean, the cake is ready.
Baking time and temperature may vary depending on the oven.
