- Characteristics: Light (Usukuchi) soy sauce is a light-coloured soy sauce, familiar in western Japan. Its high salt content, light colour and reduced flavour means that only a small amount is needed, allowing the flavour and colour of the ingredients to shine through. It is made from soya beans, wheat and rice certified under JAS organic standards and matured with sun-dried salt.
