Located southwest of Chablis, “Vaillons” is one of the largest Premier Crus in the region. The 129-hectare patch of land is defined by its warmer climate, the unique Kimmeridgian soils, and the delicate, floral and sometimes spicy character of its wines.
A blend of several Vaillons Premier Crus, with pear, apple, lemon, toasted nuts and light tobacco notes. Warm and comforting, it’s mineral-driven with rich flavours of green apple, peach and citrus fruits. The finish is refreshing, led by lively acidity and mineral notes.
Serve slightly chilled with buttery scallops, smoked trout, or gougères.
